My act of creativity for Day #7 was making this semi-healthy salad.
I started with my new favorite greens that have the perfect mix of sweet and bitter.
I added the quinoa salad that I already had prepared in the fridge. This is Punky's and my go-to lunch a few times a week.
Then I put in some cherry tomatoes and made it somewhat less healthy by dumping in some feta cheese and ranch dressing.
It was goooooood.
